Then we assessed the industry competition level with the help of Porter's Five Forces Model. After that, we carried out an environmental analysis of the food and beverage industry. In the environmental analysis, we carried out both PESTLE and SWOT analysis of the food and beverage industry. Top 7 food and beverage industry trends

As a CPG company, you need to stay on top of consumer trends, lest you fall behind the competition. This is particularly true for food and beverage manufacturers.

Unfortunately, anticipating and adapting to trends can be difficult if you don’t know what to look for. Luckily, we’re here to help.

In this article, we’ll discuss the top seven trends we’re seeing in the food and beverage industry. While this industry doesn’t encapsulate all of CPG, it’s a significant portion.

What are the top food and beverage trends?

As we’ll see, consumers are becoming savvier about how and why their food is made. Gone are the days of avoiding labels and taking deep dives into the manufacturing and production processes. People are focused on sustainability, eco-friendliness, and all-natural ingredients.

Let’s break down these top seven trends, one by one.

1. Plant-based foods

If you pay attention to trendy social media pages, vegetarianism and veganism seem like they’ve taken over the world. You can’t scroll for more than 30 seconds before seeing some recipe or image of plant-based foods .

However, despite what social media tells you, the number of hardcore vegans and vegetarians hasn’t increased substantially. A recent survey showed that only 3% of U.S. adults identify as a vegan, which is only slightly higher than the 2% figure from 2012. That said, NielsenIQ search data shows that the term “vegan” is the second-most searched snack term, and the seventh-most searched for across all online grocery shopping websites. Unfortunately, most grocery stores don’t optimize for these terms, leaving consumers to fend for themselves accordingly. For example, “vegan” is unclaimed up to 76% of the time in the snack category, and 67% overall.

That said, it seems that many consumers want to incorporate vegetarian and vegan dishes into their lives without converting altogether. So, while the number of vegans isn’t increasing, the demand for plant-based food is. According to NielsenIQ, the demand for plant-based products increased 12% between 2020 and 2021. Likewise, meat alternatives saw an 11% jump.

Examples can include vegan cheese, meat-free “meats”, and alternative milk products. Cauliflower is especially having a moment, as people are using it for everything from mashed potato alternatives to pizza crusts.

2. Responsible sourcing

Looking at a label isn’t enough—consumers want to know exactly how their food got from the farm to their plate. Factory farming is still prevalent, but most people want ethically sourced ingredients, particularly when it comes to meat. Free-range cattle and chickens are more desirable than those who grow up without green pastures and sunlight.

While there is still plenty of room for trial and error, most consumers want to see companies making a concerted effort to source everything as responsibly as possible. Ideally, you can put evidence on the packaging to illustrate your commitment to this mantra.

Some specific attributes that customers care about include:

  • Biobased Packaging Claim Certifications
  • Eco-Friendly Certified
  • Reef Safe (i.e., seafood products)
  • Biodegradable Packaging Claim Certification
  • Fair Trade Claim Certification
  • Sustainable Farming Certification

Consumers pay attention to these attributes for both themselves and their dependents. For example, some shoppers want to make sure that baby food is healthy and sustainable, while others scrutinize pet food products the same way.

3. Casein-free diet

Dairy intolerance is pretty prevalent in the U.S., with over 30 million people having an allergic reaction to lactose in dairy products. Casein is a protein in dairy that can trigger an allergic reaction. So, some consumers need to avoid it at all costs. We’ve already seen the explosive growth of “natural” products, but now we’re shifting toward specialty-diet offerings as well.

What’s crucial to remember is that casein-free is not the same as dairy-free. A casein-free product can still have other dairy elements like lactose, so buyers have to know the difference. Overall, while dairy-free means there is no casein, casein-free doesn’t mean there is no dairy.

4. Homemade convenience

Today, we all have the combined knowledge of the world at our fingertips. This means more people are venturing outside their normal boundaries while still staying at home. The rise of home delivery meal kits like Hello Fresh and Home Chef shows that consumers want to make better dishes in their own kitchens. However, since the average person isn’t trained, they need guidance to ensure that they don’t make their food inedible.

Even if you’re not in the meal kit business, you can meet the demand for convenience by making it easier for customers. Pre-made or easy-to-make dishes are much more desirable, especially for those who work multiple jobs. Overall, the trick is blending convenience with everything else, such as sustainability and natural ingredients.

5. Sustainability  

With climate change looming over everything, consumers want to know that their products are eco-conscious. Products made of recycled or repurposed materials are more valuable than single-use items. Plant-based plastics are also becoming more popular because they break down much faster than petroleum-based materials.

6. Transparency  

This trend goes hand-in-hand with responsible sourcing. Consumers want companies to be more transparent about their supply chain and manufacturing processes. The more information you can provide, the better off you’ll be. One example of transparency is notifying shoppers if there are any genetically modified organisms (GMOs) present. Some states require this labeling, while others don’t. Regardless of any regulations, consumers want to make informed decisions about the food they eat and drink. 

On a company level, CPG manufacturers can use QR codes to provide more information about specific products. Label Insights offers customized codes that can link to corresponding landing pages. 7. Global flavors

Other food and beverage trends to keep track of  

While those are the top seven trends you’ll want to keep track of in 2022, there are a few more overall trends that all food and beverage businesses can benefit from. 

Technology and food  

  • Fortunately, when it comes to transparency, you can incorporate high-tech solutions into your packaging. QR codes and RFID tags empower consumers to dive deeper into their favorite products and how they’re made. Technology also provides alternative marketing capabilities, such as augmented reality and mobile syncing. 

Health and wellness  

  • A big reason why plant-based foods are becoming more popular is that they’re healthier than the alternatives. Consumers want to get healthier, but they still want convenience. So, products that add health and immunity boosters (i.e., antioxidants, vitamins, and proteins) are becoming much more popular. 

The most-loved food and beverage brands  

  • One way to stay ahead of the competition is to build brand loyalty from your customers. Turning shoppers into fans ensures that they’ll keep coming back for more. Here are three companies that are pulling this trick off in spades. 
  • Mars – It’s easy to see why so many people love Mars. The company makes chocolate and candy – who doesn’t love that? 
  • PepsiCo – Coca-Cola has always been the dominant force in the beverage sector, but Pepsi managed to draw more positive attention in 2020. More remarkably, Coke hasn’t yet regained the throne – is there a new #1 cola brand? 
  • Molson Coors – Alcohol sales and consumption increased in 2020 due to lockdowns and shelter-in-place orders. So, it makes sense that a beer producer would make the top three. 

Appetites will increase for “functional food” and health products

Functional food and healthy alternatives used to be a small niche, but what does 2022 look like? 

Push for healthier food options since COVID-19  

Due to the pandemic, more consumers are paying attention to what they put inside their bodies. Natural immunity and health are becoming more prevalent, so brands have to keep up. 

In tune with immune  

Regardless of the state of the pandemic, more consumers want to build their immunity naturally through food. So, items that can offer a vitamin and mineral boost will be more captivating than those with less healthy ingredients. 

The science of indulgence  

Even though more consumers are paying attention to healthy foods, there is still plenty of market space for indulgent and decadent items. Food scientists know how to capitalize on the trifecta of indulgence – sugar, salt, and fat . The right combination of these elements can create craveable meals and snacks that customers will love.

Circana releases mid-year 2024 food, beverage market outlook

Insights show 2023 prediction of return to growth for retail food, beverage on track.

Circana, an advisor on the complexity of consumer behavior, released new Circana Compass insights, providing a comprehensive update on the 2024 performance of the global retail food and beverage (F&B) industry and an outlook for 2025. The data reveals a strong alignment between Circana’s previous forecasts and current market realities, offering valuable guidance for industry players as they navigate the second half of the year and plan for the next.

In November 2023, Circana forecasted that 2024 would signal a return to growth for the retail F&B sector after three years of volume decline. The projected volume increase of 1% that Circana anticipated was above historical norms, following a 1% drop in 2023, coupled with the historically low-price increase of 1.6%, down from 5.7% in 2023 and 11.4% in 2022. As a result, top-line growth was expected to slow to 2.3%, compared with 4.7% in 2023 and 9.5% in 2022.

As of mid-2024, Circana’s projections have proven highly accurate, with the F&B industry showing volume growth of 0.8%, a price increase of 1.4%, and top-line growth of 2.2%, all closely aligning with the original forecast.

“Following several years of economic volatility, we’re now seeing signs of stabilization across various sectors, including food and beverage,” said Sally Lyons Wyatt, global executive vice president and chief advisor at Circana, in a statement. “While we anticipated greater support from an improving economy, the shift from away-from-home to in-home consumption helped keep our projections on track. Manufacturers will need to strategically assess how to stimulate demand and drive profitable growth, and Circana provides the data-driven insights necessary to inform those decisions.”

Inflation has eased across the F&B sector in 2024, impacting all segments. Despite ongoing concerns about pricing, bifurcation in F&B purchases continues — some consumers are trading up to premium-priced products and super-premium items, while others are opting for private brands.

As consumers increasingly value “just-in-time” convenience and quality in their food choices, they are making smaller, more frequent trips and favoring quick-prep options from produce, refrigerated, and deli departments. The frozen and refrigerated segments have outperformed initial expectations, with refrigerated trailing only produce as a leading department in volume growth year-to-date 2024. On the other hand, the seafood and liquor segments have experienced volume declines.

Lyons Wyatt added: “As we approach the end of 2024, we anticipate the year will close out near our mid-year projections. We expect volume growth will ease to 0.5-1%, with some potential softening later in the year as fast food ‘price wars’ could impact retail F&B growth, assuming current economic conditions hold. Year-over-year price realization is projected to increase slightly to 1.5-2%, driven by slowing promotional investments and the introduction of new price increases. This will result in overall top-line growth of 2.2-2.7% for 2024.”

When comparing the U.S. to other global regions, Circana expects 2024 retail F&B growth in both EMEA and APAC to outpace that of the U.S. in terms of top-line growth, with both regions projected to achieve 4-5% growth. In APAC, this growth is anticipated to be entirely price-driven, with flat unit sales. In EMEA, the strength in top-line growth is primarily due to increased price realization, with volume growth comparable to U.S. levels.

Looking ahead to 2025, Circana projects a slight uptick in top-line dollar growth, expected to be between 2.5-3.5%, driven primarily by increased price realization between 2-3%, while volume growth is anticipated to moderate between 0-1%.

Circana’s F&B outlook is developed using econometric demand models leveraging Circana’s Demand Forecasting Platform. More than 100 variables are analyzed to test hypotheses for each model, supported by a machine-learning algorithm and more than 500 random forest models to determine the most important causal factors. Forward-looking input variable assumptions are developed using historical trends and insight from industry experts. This platform allows Circana to run scenarios and estimate future sales, breaking them down by their driving factors, it says.

The food and beverages industry falls into two major sectors, viz. commercial and subsidized/welfare. As a commercial entity, the industry further falls into two sub sectors, viz. restricted market and general market. Restricted market includes transport catering, clubs, workplace catering, and institutional food and beverage preparation. General market comprises of hotels, restaurants, snack bars, pubs, vending machines, and fast foods.

Subsidized food and beverage industry also falls into two sectors, viz. institutional catering and employee catering. Institutional catering applies to the operations in schools, universities, colleges, hospitals, prisons, and any other institution where they offer similar services (Davis, et al. 83).

Reasons behind blossoming of the Industry

People choose to go out, for instance, to celebrate a special function like graduation or when one gets job promotion. People also eat out when they are meeting friends. Hotel setting is a good place to meet new people or people that one would not want to meet at home. People could also eat away from home to commemorate an event. It could be a birthday or an event that positively influenced an individual or a group.

There are also people who eat out just to have a change from the family routine. Food and beverage operation centers are equally good locations to have meetings. Moreover, people eat out while travelling, especially on long journeys. In addition, people eat out when they are at work, attending a workshop, or in school. All these reasons are driven by the fundamental fact that the food and beverages industry is specifically designed to satisfy the demands of the consumers.

Elements of Food and Beverage Industry

There are eight elements of food and beverage industry. The first element is monitoring the needs of consumers for consumer satisfaction is very necessary for the existence of the industry. The second component is production and service aspects, which are perhaps the most important factors in the industry.

They are two-way, viz. the owner gets the profit and the consumer gets quality service. The third element is monitoring of costs and revenues. The other elements include consumer and market, formulation of policy, interpretation of demand, provisioning, and convergence of facilities.

Market assessment and Consumer Needs

Market assessment and consumer needs are two great factors to consider when setting up a food and beverage establishment. After analyzing the food and beverage industry through market research, one can prosperously decide to establish the business. Therefore, it is important to employ market research skills (market information, questionnaires, and sales-analysis among others) to map out the industry framework (Haverkamp 81).

Apart from market research, there is also market-segmentation. Knowing one’s clients and especially the food they eat is equally essential. People from different places may prefer different foods and drinks. Idea generation is also important in market assessment. Even as one thinks about venturing into the food and beverage industry, factors such as prices, product quantity, concept development, and market competition should provide good sessions for brainstorming (Enzing 23).

Service Operation System

There are three important services in the food and beverage industry. The first service is acquiring raw materials, in what is called the “input service” in the food and beverage industry. Once the unprocessed materials are available, the second service is processing them into food. The last service is the “output”, which entails serving the food to the customers.

Format of food and beverage production

Usually the format of food and beverage production begins with the store. Once the raw materials are gathered, they should be kept in a clean and neat store. Equipments such as refrigerators should be in good condition. From the store, the next step is preparation, which could be done by either cooking the food or simply cleaning up in the case of fruits. It is also important to pay keen attention to methods and recipes during food preparation. Besides, food flavor must be kept consistent in all meals, and that aspect requires close monitoring.

Before serving the food, the dining room should be neatly prepared. Clients may put up with other weaknesses, but cannot compromise tidiness. When customers are through with eating, the table should be immediately cleared. The last step is washing of dishes, cleaning of debris, and disposing stuff that cannot be re-used. This last step is imperative in food and beverage industry.

Designing Dinning Room/Sitting Area

Be it in a hotel, pub, club, restaurant, or any other outlet in the food and beverage industry, the sitting area/dining room should appear in a manner that is easily accessible to customers.

Inasmuch as the owner may want to accommodate many people as he or she can, the arrangement should be in a way that allows free flow of customers in and out without pushing and shoving. In addition, the arrangement should be in a way that clients are can have some sort of privacy.

For example, people on one table should be in a position to discuss their private issues without having to worry about other people on the next table.

Therefore, it should be in a way that the serving staff can easily access the clients in the shortest time possible. The host may also consider fixing some form of music speakers around the room. Soft music, for instance, adds to the environment of hotels and restaurants. Clubs and pubs are exceptional in terms of volume and music they play (Lentz 85).

Designing Kitchen

Although customers do not go to the kitchen or even access its location, it is equally important to design it in a way that adds to the overall production of the industry. The kitchen is partitioned into several areas. The store, for example, should have enough shelves and refrigerating facilities.

The washing area, which also includes sinks, should be spacious and kept clean all the times. There should be a set area for processing raw materials. Peeling and chopping, for instance, should be done in this section. Cooking should occur in a clean separate area with proper ventilation. There should also be a post-preparation area for keeping the prepared food before serving the customers. The other important part is the storage area utensils and pans.

Menu Planning

The menu is extremely important when it comes to the food and beverage industry. It underscores what the customers look at when they visit a hotel, and interestingly, it is behind the fall of many businesses. However, in planning the menu, several critical factors stand out conspicuously.

They include food preferences, customer food habits, prestige of the customers, economic factors, nutritional factors, tastes of the food, cultural background of the expected customers, and emotional aspects. It is also important to consider the availability and ease-of–use of products to be processed into food and beverages. Lastly, the management can upgrade the existing menu by paying much attention to the customers’ demands (Ojugo 35).

Cost Control

Businesses exist primarily to make a profit and thus the food and beverage industry is not exceptional. Possibly, the first path to this goal is cost control. This aspect requires evaluation of spending and maximization of profits. As of today, there are three approaches to cost control.

The first approach calls for the management to supervise the personnel directly to ensure maximum production. The second approach is by rationalizing the costs based on performance (Guler 161-170).

The latter is mostly popular in the food and beverage industry. The management should establish goals and then weigh them against service operations. It also means coming up with ways to measure performance. In addition, given that it hinges on performance, the management compares the actual results with the expected goals.

Lastly, cost control could be managed by corrective action. When necessary, the management may also consider reshuffling the staff or getting professional personnel. The third approach is menu pricing. Paying attention, for instance, to how the customers perceive menu pricing is extremely important. The menu pricing also holds the demand of guests (Ojugo 180).

Food processing

Food processing refers to the method of transforming unprocessed products into ready products for consumption. In food and beverage industry, food processing occurs in fours ways. The first method is a one-off production, which is used when clients request for special food and drinks with their own specifications.

A good example is a wedding cake, which is made for specific customers only. The second method is batch production, which is used when the demand of the product is not consistent.

The management prepares food based on an estimated number. The third method is mass production, which is applicable on products that are on demand. The last method is just in time. In this method, customers choose what is to be included in their food before preparation (Davis, et al. 74).

Food and Beverage technologies

Computer technology is an important element of in the food and beverage industry. Computers speed up paper work, especially in the field of data recording. They also find a wide application in the area of improving customer service. Moreover, computers are useful in increasing sales revenue by enhancing personnel productivity.

In addition, computer networks have eased bookings analysis and daily work schedule (Seric and Saura 7-38). Media and marketing technologies are also important elements in increasing production in food and beverage industries. Both of these technologies help in keeping consumers close to the products, especially during changes or new products in the market (Xia 93).

The food and beverage industry is an extremely complex, wide, and diverse market. When people eat out while travelling, go to clubs, have their meals and drinks in hotels and restaurants, spend a night in a hotel, or go watching movies/cinemas that are routinely marked with snacks, they are simply patronizing the food and beverage industry.

This field can be interesting, but can also be exceptionally challenging. It requires people who are creative, able to identify consumer needs, willing to work with the public, and can think quickly when it comes to solving problems. Over the last decade, this industry has tremendously blossomed and has improved the tourism industry.
