Michelin Guide announces the BEST restaurants in Moscow

“Moscow has many stars, but no Michelin stars yet,” joked Sergei Sobyanin, the city’s mayor, at the opening ceremony of the Michelin edition of Moscow. The capital has great historical gastronomic roots. Merchants and noblemen laid down their last ruble to treat guests with dignity. In Soviet times, many traditions were lost and first-class restaurants turned into Soviet canteens. In the 1990s, Russia and Moscow began to catch up and hundreds of good restaurants appeared which surprised guests with the sophistication of their dishes. 

Moscow became the first city in the CIS with restaurants and cafes awarded with stars and other Michelin trophies, while Russia became the 33rd country in the world to join. 

Why is the guide coming to Russia now?   

According to Gwendal Poullennec, international director of Michelin guides, work on the Moscow guide started five years ago. Experts of the Guide visited restaurants anonymously and evaluated them according to international standards, analysing several criteria: quality of food, combination of flavors, chef’s skill, price and quality, regularity of restaurant’s work. The pandemic made a difference in the evaluation process and the announcement of the results.

“This project was a challenge for all of us because of the pandemic, travel restrictions and event cancellations. But, we got it done in the end. We are happy to say that Moscow, as one of the cities for gastronomic tourism, has great prospects in terms of its development. The city certainly has its own culinary identity; many chefs work with local products, carefully preserving the culinary heritage of their region. The first Moscow edition will include 69 restaurants,” Gwendal Pullenek said at the guide’s presentation in Moscow on October 14. According to him, this is just the beginning, which should support the restaurant industry. 

Two Stars: The best of the best  

Two restaurants in Moscow have been awarded two Michelin stars. The award means that the restaurant is so good that it is worth visiting, even if it is not up your street (or fit your budget!).

Two stars went to ‘Twins Garden’ restaurant, headed by brothers Ivan and Sergey Berezutsky. Twins Garden has won a number of international awards and in October it was ranked 30th on The World’s Best 50 Restaurants list. The brothers promote the symbiosis of science and nature and most of the products in the restaurant come from their farm.

The second restaurant in this category was ‘ARTEST - Chef’s Table’, a new (open since February 2021) fine dining restaurant by chef Artem Yestafiev and restaurateur Arkady Novikov.

Estafiev recently moved to Moscow from St. Petersburg, but has already managed to win over the Moscow public with his approach to gastronomy. The chef pays special attention to local products, uses wild and rare mushrooms. Before joining ARTEST, he trained at the restaurant of French chef Alain Ducasse, whose establishments have been awarded Michelin stars more than once.

One Star: It’s worth visiting!

Seven restaurants in the capital have been awarded one Michelin star. 

Among them: 

- ‘Selfie’, a restaurant of auteur cuisine headed by chef Anatoly Kazakov (one of the top 100 chefs in the international ‘The Best Chef Awards 2021’ ranking);

- ‘Beluga’ restaurant of Russian delicacies, where you can taste two dozen kinds of caviar, enjoy the stunning view of Red Square and indulge in the explosive menu by Chef Evgeny Vikentyev;

- ‘Grand Cru’ restaurant and winery by Patriarch’s Ponds with David Emmerle at the helm;

- ‘White Rabbit’ restaurant in the center of Moscow with chef Vladimir Mukhin and his innovative approach to Russian cuisine (No. 25 on ‘The World’s Best 50 Restaurants’ ranking);

- ‘Biologie’ gastro bistro with its careful attitude to nature and Ekaterina Alekhina at the head of the kitchen;

- ‘Savva’ restaurant in the historic building of the ‘Metropol’ hotel in the center of Moscow (run by Andrey Shmakov ).

Green Stars  

The Michelin Guide gives this award to the restaurants that care about conscious consumption, the reduction of food waste and take into account seasonality. The restaurants Biologie (chef - Ekaterina Alekhina), Twins Garden (Berezutsky brothers) and the northern cuisine restaurant ‘Bjorn’ (Nikita Poderyagin) in Moscow all received a Michelin Green Star. 

Good food for reasonable money  

Fifteen restaurants made the BIB Gourmand list, where you can have a delicious meal for 2,000 rubles (approx. $28). Among them are ‘Sevicheria’, ‘Delicatessen’, ‘Bjorn’, ‘Eva’, ‘Erwin.RekaMoreOkean’, ‘Flor’, ‘Geraldine’, ‘Hibiki’, ‘Kazbek’, ‘Lucky Izakaya bar’, ‘Rybtorg’, ‘Tilda’, ‘Ugolek’, ‘Vani’ and ‘Uilliams’. 

Another 45 restaurants also made the Michelin Guide’s list of recommendations.

Café Pushkin

Designed to recreate the feel of a 19th century aristocrat’s house, Café Pushkin has become one of the most popular restaurants in Moscow, thanks to the quality of its food, impeccable service and the excellent vodka selection. The atmosphere of pre-Revolution Russia is delightfully charming, from the flowery script of the menu to aristocratic country house décor. Pushkin is the ideal destination if you want to be treated like Russian nobility and dine like a Tsar – but book ahead, the restaurant’s popularity requires reservation well in advance.

Lavishly decked out with chandeliers and hand-painted furniture, the menu selection may come as a surprise to first-time guests, with options ranging from Pi Pa duck with melon and truffle to beefsteak with foie gras. Turandot puts a French spin on pan-Asian cuisine, and does so with incredible style and boldness. Whilst the interior décor is certainly to be marvelled at, it is the thoughtfully conceptualized and perfectly executed menu options that make for an incredible dining experience.

When the Ginza Project, a company that owns some of the finest restaurants in Moscow, announced that they would be opening a restaurant on the 29th floor of Radisson Royal Hotel, the excitement and anticipation was palpable.

The company has a reputation for the high quality of its restaurants that grace the streets of the capital, and Buono is no exception. The views from Buono are unashamedly spectacular, while the décor is elegant, with soft creams complementing the fine views on offer. The food is classical Italian; Chef William Lamberti is well known throughout Europe and has created an excellent menu. It’s always best to book ahead at Buono, as the window seats that offer the finest views over the city are quickly taken.

OAK HALL, CDL

Located in an elegant 19th century mansion, CDL is one of the most sophisticated restaurants in Moscow.

The interior has been gorgeously designed to recreate the grandeur of the Silver Age of Russian culture, with antique balustrades and bas-reliefs throughout the Oak Hall main room. The staircase in the Oak Hall is a particular masterpiece; it was built without a single nail or screw. The fireplace is equally impressive and has been used as a meeting room by President Dmitry Medvedev. Guests can also hire additional rooms such as the Cigar Room and the Cabinet Room. A menu of authentic Russian cuisine has been created by top chef Alexander Popov, with organic dishes bursting with flavor and a splendor to match the opulent surroundings. With so much luxury and class on display, it’s little wonder that former US Presidents Ronald Reagan and George Bush have chosen to dine here. Situated in the center of the city between Bolshaya Nikitskaya 53 and Povarskaya Ulitsa 50, it’s worth booking ahead to avoid disappointment.

White Rabbit

With a domed window inviting soaring views of the Moscow cityscape, White Rabbit has recently undergone extensive renovations, to both its interior and its menu. Renowned architect Natalia Belonogova has transformed the restaurant into an airy, modern space, perfected by the addition of a summer veranda. To connect the dining options with the new interior, head chef Vladimir Mukhin has created a new menu, Metamorphoses, to reflect the lifecycle of the mayfly butterfly.

Delight your palette with scallop, strawberries and blackcurrant or, for dessert, dandelion honey with melted cottage cheese. This summerlike and refreshing menu has its roots in Russian soil and its head in the clouds above Moscow’s skyline.

One of the best places to see and be seen, the O2 Lounge is half stylish seafood restaurant and half trendy pre-club hangout.

The food on offer is delicious Japanese fare, with sumptuous sushi prepared in front of diners by the team of talented chefs led by Nicholas Courtois. Located on the 12th floor of the Ritz-Carlton hotel, the restaurant has spectacular panoramic views over Red Square and The Kremlin. Moscow is changing for the better!

This is the first thought that comes to mind if you look at the building of the MODUS restaurant project in the historic alley of the Plushyhi district. The majestic three-storey mansion in the neoclassical style is truly impressive. Architect Irina Naryshkina worked on the project, the interior was designed by designer Anna Kurganova.

During the day, through the stained—glass windows, the restaurant hall is filled with sunlight, inviting you to breakfast, and in the evening they reflect the Church of the Exaltation of the Holy Cross — the place of Chekhov’s wedding, and the flickering of crystal chandeliers. Every winter, a fireplace is lit in the main hall, and the whole space is filled with the aromas of juniper and fir cones. The time spent in comfort on soft sofas seems to slow down. The directions of the cuisine and the choice of menu items are based on rich experience and a look into the future. The MODUS restaurant concept, which has been in existence since 2006, is now being revealed in a new look, like a flower of life symbolically reflected in the restaurant’s logo.

For four years (2021, 2022, 2023 and 2024), the restaurant has been included in the top 50 best restaurants in Moscow and the top 100 best restaurants in Russia according to the prestigious national Where to Eat award.

Text description provided by the architects. A small two-story mansion with the shaded terrace in Trubnikovsky lane. And the first fine dining restaurant of signature dishes by Arkadiy Novikov in partnership with chef Atrem Estafev. Embarking on the project, we were astonished at the uniqueness of the client's vision which was not made up of clichéd models of already existing restaurants.

The two worlds were presented to us. The ground floor depicted the Dark world. Roots, soil, and the earth itself in its richness. The first floor served as a portal into Light world, glowing and airy. A stunning staircase layered with brass sheets bridges these transition stages. One of the idiosyncrasies is the Russian avant-garde kitchen where the dishes are served on handmade ceramics. Having been commissioned with the task of such scale, we fully immersed ourselves in the elaboration of the worlds.

First, we needed reference points. The rootedness of the ground floor developing into the light world. That's how we came up with the idea of the chef's table for 10 people with its roots. And on the first floor, we wanted lightness and dance with space. So Arkadiy and Artem brought forward the concept of a fireplace as a centerpiece. The ground floor with its lumpy textured wall is a quintessence of earth. The shutters which bear resemblance to mushroom caps trick you into thinking they grow out of the restaurant walls. The brass-patinated kitchen islands create the analogy with metals buried deep in the bowels of the Earth.

Bespoke chef's table sprouting from the floor with its roots are made up of eight fragments of fallen trees stumps. The ideal wood brought from the North Caucasus was meticulously picked, polished, and topped with a wild pear slab to complete the custom-made signature table. The sculpture bench in the entrance lobby is a totem between the two worlds. Dark woody hues of the ground floor and light tactile shapes of the first floor. Rich matte walls are accompanied by a glossy mirror -an masterpiece by Christophe Gagnon- which amplifies the mysticism of the space.

'Dance' with the upper space went hand in hand with the ground area.  Arkadiy Novikov and Artem Estafev themselves were fully involved with the collaborative work.  We proposed to center the space around the sculpture, the starting point of the project and found it crucial to thicken the space into a massive entity, which is simultaneously malleable and light, shape-wise. This concept brought us to the oeuvre of Henry Moore and Isamu Noguchi.

We were simultaneously working on the watercolor walls and the shape of the furniture. What we were striving for was warmth and the kinesthetic nature of the room. This determined the choice of light upholstery as a symbol of this world’s transparency, amicability, and responsiveness. Customers’ comfort in the soothing and ambient atmosphere of the first floor was of the utmost importance for us. All the furniture with an exception of chairs was custom-made by our ideas. We wanted to put final touches on calm and subtle object d’arts, so we opted for black and white film photography by Alexander Guyvoron, a photo artist who takes his pictures on the island of Sakhalin.

About the Hermitage

The restaurant’s specialty was French cuisine, though adaptations were made of course to local customs. Waiters, for example, dressed in Moscow style — shirts with silk sashes tied at the waist. And as was also Moscow custom, the waiters were not paid. Instead, their tips were their wages. Tips were to be pooled together each day, then divvied up. If anyone held back on the tips, they were dismissed.

“But it would only be after five years of obscure labour that he received the insignia of his profession: a silk sash and a purse of black patent leather for his counters. He always kept the purse in his sash; as for the counters, he was given them at the cash-desk every morning, to the value of twenty-five roubles, and they served to pay for the dishes ordered at the ‘buffet’. Thereafter he would exchange the money he received from customers for further counters. Tips were put into a pool and at the end of the day were shared by the staff. They were paid no wages and even had to pay their employer up to 20 per cent of their earnings…” — Troyat, Henri. Daily life in Russia under the last Tsar. Stanford University Press, 1979. Page 55.

The restaurant was particularly popular for after-theatre or after-ballet suppers:

“Specially famous were the late supper meals which people who were celebrating would come to after the theatre… The rooms were filled with men in tails, dinner jackets or uniforms and ladies with décolleté dresses sparkling with diamonds. The signature dish of the restaurant was, reputedly, Salade Olivier, or as it came to be called in the West, Russian Salad .

After The Russian Revolution

The restaurant closed in 1917 during the Russian Revolution.

“In the A.R.A. Moscow. Women of noble families, shopkeepers wives, manufacturers wives and peasant women sewed side by side for weeks in the warm rooms of the Hermitage Restaurant, formerly Moscow’s gayest and fastest cafe, now central children’s feeding depot for the A.R.A., making little knitted things for the children…” [18] Hullenger, Edwin W. The building was used as is; relief workers toiled amongst the opulent splendour in which Russian aristocrats and business magnates had formerly partied:

“Moscow’s Most Noted Restaurant Now American Kitchen for Children: The crystal chandeliers are still hanging. The exquisite murals of 1885 still adorn the ceilings. The green and gold walls have not changed. Even the huge stoves in the kitchen are the same. But the guests are entirely different. To world travelers familiar with the gay Hermitage Restaurant of Moscow and the brilliant parties that were once held in that lively Russian city, the present diners at the Hermitage would present an incongruous picture. Instead of men and women in evening dress and satin, velvet and ermine entering the great doorways, each night after the opera or ballet, he would see a noon-day procession of small boys and girls, carrying pails, cups, coffee-pots, or bowls.” [19] Mexia Evening News. From 1921 to 1928, the Russian revolutionary government Lenin experimented with limited capitalism under a policy called The New Economic Policy. During this time, sometime after 1922 when the American Relief efforts were finished with the building, someone did an attempted re-opening of the restaurant, but it was of course a shadow of its former self:

“The man who used to run the restaurant managed to mimic the restaurant’s past in a tawdry sort of way. The menu was showing again Escalopes à la Pompadour, Escalopes Marie Louise, Valois sauce, Olivier salad. However, the cutlets were tough, having been cooked in castor oil and the Olivier salad was made from leftovers. All the same this suited the NEPmen [20] NEPmen were people able to profit from the fleeing New Economic Policy jQuery('#footnote_plugin_tooltip_647_1_20').tooltip({ tip: '#footnote_plugin_tooltip_text_647_1_20', tipClass: 'footnote_tooltip', effect: 'fade', predelay: 0, fadeInSpeed: 200, delay: 400, fadeOutSpeed: 200, position: 'top right', relative: true, offset: [10, 10], }); customers very well. In the porter’s lodge were hanging sealskin coats, beaver collars, sable coats. In the main hall were those same chandeliers, white tablecloths and gleaming crockery… On the wall facing the buffet they had still kept something written by M.P. Sadovsky. He used to take his lunch here, mocking the fast set and watching the various characters. Instead of being served by waiters in white shirts, the food was now served by menials in soiled jackets, and they would run when they were called, the trimmings on their trousers gleaming like lace.” [21] Gilyarkovsky, Vladimir. This restaurant looks and feels old. Our waitress was nice, but slow. The food was just okay. Pretty sure the salad was made ... with bagged lettuce, the cheese in the salad was from a bag...just not fresh. The salad dressing was not good. I ordered friedmushrooms, the portion was very generous, the breading was separated from the mushroom. When you bit into the mushroom, thewhole mushroom came out, as well as a stream of very hot water. Those mushrooms were so tough you literally could not bite intothem. The service was awesome. Our server was super friendly and very attentive. Too bad the food was not good. Ordered a $30 steak ... and got a plate of gristle and unchewable meat. The skin on the baked potato was burnt. My sister ordered the same cut, and itwas the same way. It was just a huge disappointment.
